Cajun Chicken Pasta
A lightened up chicken pasta dish with just a hint of cajun seasoning. This is one of David’s FAVORITE lunches. It is so easy to make for meal prep and it reheats well each day. If you love a lot of heat, definitely feel free to increase the cajun seasoning.
Cajun Chicken Pasta

Ingredients
- 1 box pasta cooked al dente
- 1 lb chicken breast cubed
- 1 tbsp cajun seasoning
- 1 tbsp light butter
- 2 bell peppers diced
- 2 tomatoes chopped
- ½ jalapeno pepper finely diced
- 15 oz can of fire roasted diced tomatoes drained
- ½ small onion finely diced
- 1 tsp garlic minced
- 1 cup chicken broth
- ½ cup skim milk
- 3 tbsp light cream cheese
- 1 tbsp flour
Instructions
- make pasta according to package directions
- season chicken with cajun seasoning then brown in skillet, set aside
- add butter to skillet and saute onion, seasoning with salt and pepper
- when onions translucent, add garlic and saute one more minute, until garlic aromatic
- add veggies, cooking until vegetables tender
- meanwhile, mix cream cheese, milk and flour in a small hand blender
- when veggies cooked, add chicken, cream cheese mixture and chicken broth to pan and cook ~ 2 minutes
- test sauce – if not spicy enough, add more cajun seasoning
- when sauce is warm and starts to thicken, add pasta and tomatoes
- mix well and serve
