Cajun Chicken Pasta

A lightened up chicken pasta dish with just a hint of cajun seasoning. This is one of David’s FAVORITE lunches. It is so easy to make for meal prep and it reheats well each day. If you love a lot of heat, definitely feel free to increase the cajun seasoning.

Cajun Chicken Pasta

Ingredients
  

  • 1 box pasta cooked al dente
  • 1 lb chicken breast cubed
  • 1 tbsp cajun seasoning
  • 1 tbsp light butter
  • 2 bell peppers diced
  • 2 tomatoes chopped
  • ½ jalapeno pepper finely diced
  • 15 oz can of fire roasted diced tomatoes drained
  • ½ small onion finely diced
  • 1 tsp garlic minced
  • 1 cup chicken broth
  • ½ cup skim milk
  • 3 tbsp light cream cheese
  • 1 tbsp flour

Instructions
 

  • make pasta according to package directions
  • season chicken with cajun seasoning then brown in skillet, set aside
  • add butter to skillet and saute onion, seasoning with salt and pepper
  • when onions translucent, add garlic and saute one more minute, until garlic aromatic
  • add veggies, cooking until vegetables tender
  • meanwhile, mix cream cheese, milk and flour in a small hand blender
  • when veggies cooked, add chicken, cream cheese mixture and chicken broth to pan and cook ~ 2 minutes
  • test sauce – if not spicy enough, add more cajun seasoning
  • when sauce is warm and starts to thicken, add pasta and tomatoes
  • mix well and serve
