Vegan Pumpkin Chocolate Chip Muffins

Happy October!!!! In our house, October is the start of ~spoooky~ season and all thinks pumpkin. Y’all – these vegan pumpkin chocolate chip muffins are out of this world good! I recently made desserts for my sister in law’s bridal shower and I wanted to make something for her sweet vegan friend, Teresa. Let me tell you, vegan baking is HARD. After 3 horrifying attempts, I decided to ditch the recipes I was using and just make up my own. These muffins have no oil, they are vegan and they are even gluten free if you use gluten free flour! A banana and pumpkin puree make these little cuties super moist and they are packed full of warm fall spices and tons vegan chocolate chips. Seriously, you will not even be able to tell they are vegan.

Vegan Pumpkin Chocolate Chip Muffins

Vegan, oil free pumpkin chocolate chip muffins.

Ingredients
  

  • 1 banana
  • ½ cup flour can use gluten free
  • 1 cup oats divided
  • ½ cup sugar
  • ½ cup almond milk unsweetened
  • ½ cup pumpkin puree
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp cloves
  • 1 tsp pumpkin pie spice
  • 1 tsp baking powder
  • ¾-1 cup mini vegan chocolate chips
  • coarse sugar for topping

Instructions
 

  • Preheat oven to 400°F
  • Food process ½ cup oats
  • Mash banana in mixing bowl or with fork then mix with rest of ingredients, folding in chocolate chips last
  • Scoop in to greased muffin pan and then bake for 15-20 minutes, until a toothpick comes out clean
