Easy Deviled Eggs

Easter is finally upon us! We eat deviled eggs a lot, especially in the summer time, but they always come to my mind when I think of Easter treats. This is a classic, easy deviled egg recipe. If you are feeling super fancy, add a sliced or diced jalapeno and/or bacon!

Deviled Eggs

Ingredients
  

  • 12 hardboiled eggs
  • 1/2 cup light mayo I like Dukes
  • 1 tbsp butter soft
  • 1 tsp mustard
  • 3 tsp sweet relish
  • salt and pepper to taste
  • paprika for topping
  • bacon cumbled, optional
  • jalapeno sliced or finely diced, optional

Instructions
 

  • Cut hardboiled eggs in half, put yolks in a bowl and place halved egg whites on plate
  • In bowl with yolks, add mayo, butter, mustard, sweet relish, sriracha and salt and pepper to taste. If you are feelin' fancy, add bacon and jalapeno pepper.
  • using a hand mixer, mix together until light and fluffy
  • scoop into halved egg whites and top with a pinch of paprika – if you are feelin fancy, use a piping tip to pipe filling into egg, however, if you add bacon and jalapeno it is much easier to scoop with a spoon because chunks can get caught in piping tip
