Low Fat Summer Berry Muffins

Ingredients
  

  • cup AP flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ¾ cup sugar
  • cup applesauce
  • cup skim milk
  • 1 egg white
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • 1 cup blueberries
  • 1/4 cup blackberries
  • ¾ cup strawberries
  • 1 cup sprinkles

Instructions
 

  • preheat oven to 400°F
  • whisk together dry ingredients (including sugar) then add milk, egg white, vanilla, apple sauce and lemon juice
  • fold in berries and 3/4 cup of sprinkles then scoop into muffin tins using ice cream scoop or measuring cup so that tins are 3/4 way full 
  • sprinkle tops with remaining sprinkles
  • bake 15-20 minutes (check for doneness at 15 minutes by inserting toothpick into center of muffin - if toothpick is dry, they are done, keep checking every minute until they are done to prevent muffins from drying out)
