Beef Taco Salad

Mexican inspired beef taco salad with all the good toppings

Ingredients
  

  • 1 lb extra lean ground beef
  • 1 cup water
  • 1/2 onion minced
  • 2 tbsp chili powder
  • 1 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp red pepper
  • 1/4 tsp cumin
  • 1/4 tsp adobo seasoning
  • 1/4 tsp complete sazon seasoning
  • 1 cup corn fresh, uncooked
  • ¼ cup parsley minced - you can use cilantro
  • 1 tsp butter
  • 1½-2 cups Doritos crushed
  • 1 cup chopped tomatoes optional
  • 1 cup black beans optional
  • 4 cups lettuce chopped

Instructions
 

  • in frying pan, cook hamburger and then remove from pan and set aside
  • in same pan, saute onions until translucent, seasoning with salt and pepper (you may need to add a little oil to the pan)
  • add hamburger back to the pan then add spices and water, stiring well to combine and then bring to a boil
  • reduce heat and simmer until all water is gone
  • while beef mixture is simmering, heat up butter in a small skillet and then add corn
  • season corn with salt, pepper and parsley
  • cook corn for about 5 minutes, then set aside
  • when beef is ready, assemble salads by placing lettuce in large bowl then topping with 1/3 of the beef mixture, 1/3 of the corn, 1/3 of the tomatoes, 1/3 of the black beans (optional) and then top off with the crushed doritos!
