Spring Mix Salad with Lemon Dressing

I am so obsessed with this easy peasy salad. I use the spring salad mixture with all the good lettuces like arugula and spinach then toss it with a lemon-olive oil dressing that seriously takes less than a minute to come together. I even make the salad dressing in this cute little salad dressing shaker so I can save the leftovers if we don’t use it all!!

Ingredients

  

• 1 box spring mix salad
• 1/4 cup lemon jucie freshly squeezed
• 3 tbsp olive oil
• 1 tsp salt
• 1/2 tsp pepper

Instructions

 

• mix together the juice from ~2 lemons (1/4 cup) and olive oil – if you don't like things as lemony, add more olive oil
• add salt and pepper to olive oil/lemon mixture
• toss dressing over spring mix salad and serve immediately
